About David Polny

David’s Story

David Polny has spent decades in food service, including 20 years in franchising and involvement in more than 150 restaurant openings across Canada. Today, he applies that experience to operating restaurants and helping entrepreneurs develop, test and launch new food brands.

Food Business Unfiltered was created to share practical lessons for restaurant owners, aspiring entrepreneurs, franchise operators, food truck owners, ghost kitchen founders, and anyone considering a food business.

The goal is not hype. It is preparation. Food service can be rewarding, but it punishes people who go in unprepared.

David’s perspective is shaped by real operating decisions: leases, loans, payroll, partners, staffing, delivery platforms, food costs, catering, customer issues, and brand-building pressure.

This site is for people who want the real conversation before they invest money, sign paperwork, choose partners, or assume a good concept is enough.

No shortcuts. No sugarcoating. Just food business lessons from someone who has lived the good, the bad, and the ugly of the industry.
